Apple Pie Cookies baked with fresh diced apple and a hint of chocolate.
Ingredients
1 Organic HoneyCrisp Apple
1 Organic GrannySmith Apple
⅓ Cup Light Brown Sugar
¼ Cup Granulated White Sugar
4 Tbsp. Butter, Softened
2 Tsp. Vanilla Extract
1 Tsp. Baking Soda
1 Cup Flour - more if needed, see instructions
1 Cup Plain Greek Yogurt
½ Cup Unsweetened Applesauce
1 Large Egg
1 Tsp. Pumpkin Pie Spice or Cinnamon
½ Cup Semi-sweet Chocolate Chips
2 Tbsp. Golden Flaxseeds
1 Tbsp. Chia Seeds
Optional: Walnuts, Raisins
Additional Variation: Add Oats
Instructions
Combine Flour, sugars, cinnamon and baking soda in a large mixing bowl.
Stir in the softened butter, egg, and vanilla extract.
Next, stir in the greek yogurt and the applesauce, half of the required amount at a time.
Stir in the flaxseeds and chia seeds; add walnuts and raisins as well if desired.
Add apple; diced. Next, stir in chocolate chips.
Mix well. If dough appears too wet; SLOWLY add in additional flour (and/or oats if making an oatmeal variation - a tablespoon at a time.) Dough should be sticky and moist, but also thick with a consistency similar to chocolate chip cookie dough.
Chill dough in the refrigerator for at least 15 minutes while preheating oven to 350.
Drop by tablespoon onto a greased cookie sheet. Watch closely; baking for 7 minutes for softer cookies or 10 for a a crisper cookie.
Remove from cookie sheet and allow to cool before storing.
Yields 15 to 20 cooies depending on size. Enjoy! :)
